simple rice salad

the kitchen is a wonderful laboratory for experiments. and today, it’s leveling up rice and making it a bit adventurous.

diced carrots
diced tomatoes
cucumber
mint
parsley
(roasted) sesame seeds

dressing: olive oil, lemon, salt

note that rice has to be cold when mixed with the above ingredients. it is better to cook the rice the night before. then, place it in the fridge. for a little bit of colour, use brown or red rice.
